Vegetarian Galauti Kebab & Roomali Roti

This recipe is delicious, easy and super comforting. It is high on proteins and amazing for vegetarians (and vegans) & APPROVED BY OUR MEAT EATER FRIENDS 🥰 Thanks to our favourite chef @nehadeepakshah 👈🏼 Ingredients

1/4 cup Rajma, soaked over night and pressure cooked
1/2 cup Chana Dal, soaked for 1 hour & pressure cooked
1/4 cup urad dal, soaked for 1 hour and pressure cooked

1 small onion, sliced
3 cloves of garlic, sliced
1/4 tsp ginger, grated

2 tbsp ghee *Whole Spices*
2 bay leaves
4 to 5 green cardamom
1 black cardamom
Few Black pepper
A pinch of Nutmeg
1 mace
2 inch cinnamon stick
2 to 3 cloves

Dry Masalas
1 tsp red chilli powder
1/4 tsp garam masala
1 tsp coriander seed powder

1 tsp Rose water
1 tsp kewra water (optional)
Salt, as required

For Dhungaar

1 small piece of super hot coal
1 small piece of cinnamon
2 elaichis
2 cloves
1/2 tsp ghee

Chopped coriander
Ghee for cooking the kebabs

For Whole Wheat Rumali Roti

1 cup whole wheat flour
1/2 tsp vinegar
1/2 tsp oil
Warm water
Salt

Knead a soft dough just like roti. Roll it super thin using dry maida. Roll it directly on the platform and keep sprinkling some dry flour. Make it as thin as you can. Cook this on a super hot tawa. Once it has blisters, flip and cook on the other side too. Once cooked, fold it and immediately keep under a kitchen roti cloth or in a hot case.

*Also don’t over cook these because while cooling also they will continue to dry out.
