Sweet Potato Black Bean Taco (with Salsa)

Longing for spicy Mexican food but don’t have all the fancy ingredients? Our Sweet Potato Bean Taco is completely vegetarian and easy to make.  Follow our recipe and prepare some restaurant-style mango salsa and roast spicy salsa sauces to go with the taco.
Warning! eating this will leave you craving for more.

Ingredients For The Tortillas

1/2 Cup Wheat Flour
1/2 Cup Maize Flour
2 Teaspoon Oil
Salt (to taste)
Lukewarm water (For Kneading)

Ingredients For The Sweet Potato And Bean Filling

2 Big Sweet potatoes
1 Teaspoon Red Chili Powder
1 Teaspoon Cumin powder
1 Teaspoon Smoked Paprika 
1/2 Teaspoon Salt
1 Tablespoon Oil (either olive oil or avocado oil)

Ingredients For The Beans

1 Cup Black Beans (soaked and boiled) keep the water of the beans too
1 Teaspoon Taco Seasoning
1 Teaspoon Milk
Salt (to taste)

Ingredients For Mango Salsa

1 Mango (cubed)
1/2 Red Bell Pepper (chopped finely)
1 Onion (chopped finely)
2 Green chilies (chopped finely)
3 Tablespoon Lemon Juice
Salt (to taste)
Coriander (for garnish)

Ingredients For The Avocado Sour Cream

1 Ripe Avocado
1 Cup Hung Curd
1 Teaspoon Minced Garlic
1 Teaspoon Minced Green Chili Salt (to taste)

Ingredients For Roasted Salsa

 3 Tomatoes (Charred on a stove top)
1 Onion (Charred on a stove top)
3 Green Chilies
6 Cloves Of Garlic
Pinch Of Sugar And Salt
Coriander (as per taste)
1 Tablespoon Lemon Juice

Method

Recipe for the tortillas :

1) Knead the wheat flour, maize flour, oil, salt together.
2) Add some lukewarm water and form into a dough.
3)The dough is ready when it’s smooth but not sticky. Set aside the dough for 1/2 hour.
4) Form into small balls and roll into tortillas.
5) Heat a skillet, once heated place your tortilla and cook on both sides.
6) Once cooked wrap your tortillas in a muslin cloth until ready to eat.

Recipe for the sweet potato and bean filling :

1) Preheat the oven to 220 C.
2) Peel the sweet potato and cut into cubes, toss in the oil and spices.
3) Bake for 30-40 minutes till crisp and golden.
4) Halfway through flip the potatoes so they’re evenly cooked.
5) Take out and set aside

For the the beans :

1) In a pan, add 1 tsp oil, slowly add the beans and taco seasoning. More in some of the water used to cook the beans, cook for 3-5 minutes.
2) Add in the milk to give a creamy flavor.
3) Once the beans are almost cooked, add in the sweet potato and mix together. You can keep some of sweet potato separate too.

Recipe for mango salsa :

1) Mix together all the ingredients and serve cold

Recipe for the avocado sour cream :

1) Mix together all the ingredients and combine until smooth and creamy. If you don’t have avocado, just omit that ingredient and make the sour cream.

Recipe for roasted salsa: 

1) Born together all the ingredients including the skin on the charred tomatoes and onions till you have a nice smooth mixture. You can also leave it chunky.
