Whip up some quick and easy creepy cupcakes this Halloween; ideal for your kids and their friends heading to trick or treat, or dessert for your Halloween house party. They are simple, delicious and fit perfectly for a haunted theme.

Ingredients 

 

For the Vanilla Cupcakes

1.25 teaspoons vanilla extract

1 cup milk (1 tablespoon vinegar) or buttermilk

1/4 tablespoon baking soda and salt

2 tablespoons cornstarch

3/4 cup sugar

1/3 cup canola oil or coconut oil

1.25 cups of flour

 

For the Chocolate Cupcakes

1 teaspoon vanilla extract

3/4 cup buttermilk

1/4 tablespoon baking soda and salt

6 tablespoons unsweetened cocoa powder

1 teaspoon instant coffee

4 tablespoons unsalted butter

1/2 teaspoons apple cider vinegar

2 tablespoons cornstarch

1 cup sugar

1/3 cup canola oil or vegetable oil

1 1/4 cups of flour

 

Frosting Ingredients 

1/2 cups salted butter

1.5 teaspoon vanilla extract

nutella/melted chocolate (optional)

3 cups powdered sugar

3-4 tablespoons milk/cream

Food coloring (optional)

 

For toppings

Method

 

Vanilla Cupcakes

  1. Pre-heat oven to 360º F degrees. Line muffin tray and spray it with non-stick spray.
  2. Combine the ingredients (flour, cornstarch, baking powder, baking soda and salt) in a bowl and whisk it. Set it aside after.
  3. Mix 1 cup milk with 1 tablespoon of white vinegar and set it aside for 5 minutes or use buttermilk.  
  4. Combine powdered sugar and oil and whisk using a mixer. Should look creamy. 
  5. Add vanilla extract and then slowly add your other two mixtures (flour mix and milk/vinegar mix).
  6. Make sure it is well combined. Adding both mixes part by part will help.
  7. Fill the muffin tray with the batter about 2/3 full.
  8. Bake for 15-18 minutes.
  9. Check with a knife or toothpick.
  10. Remove cupcake and let it cool before frosting.

 

Chocolate Cupcakes

  1. Pre-heat oven to 360º F degrees. Line muffin tray and spray it with non-stick spray.
  2. Combine the ingredients (flour, baking soda, cocoa and salt) in a bowl and whisk it. Set it aside after.
  3. Mix together hot water and instant coffee and put it aside after completely combined. 
  4. Combine powdered sugar and butter and whisk using a mixer. Should look creamy. Add sour cream, oil, buttermilk, vanilla, vinegar and the coffee mix. Combine all these ingredients.
  5. Fill the muffin tray with the batter about 2/3 full.
  6. Bake for 20-25 minutes.
  7. Check with a knife or toothpick.
  8. Remove cupcake and let it cool before frosting.

 

Frosting

Frosting is optional, you can simply add some marzipan or just add your Halloween toppings. Or cut marzipan in Halloween creature shapes.

 

Combine all frosting ingredients and whisk until fluffy and creamy. Keep it in the in the fridge for a while before adding onto of the cupcakes. Add your Halloween toppings.
